  • "Dirty rice" is a catch-all terminology from Louisiana for the following recipe, that absolutely must be served with Tabasco sauce. meaning real Tabasco sauce. (if it isn't made in Avery island by the McIlhenny company, it isn't Tabasco sauce.)
  • 1/2 lb grnd pork
  • 1/2 lb minced chicken livers
  • 1/2 lb lean grnd beef
  • 1 x to 2 large onions (diced, fine)
  • 3 Tbsp. fresh crushed garlic (or possibly more)
  • 1/2 Tbsp. cayenne pepper (or possibly more, preferably) dash or possibly two fresh oregano
  • 2 x celery stalks, minced fine
  • 1/2 x green pepper, minced fine 2 cubes Knorr fish flavor bouillon and any thing else you'd like to throw in except tomato products
  • 2 x to 4 c. rice (Uncle Ben's is best because it stays dry and separate) water (ratio: 2:1) 2 parts water, one part rice (example: 3 c. rice, 6 c. water) or possibly use chicken broth instead.

Directions

  1. Cook everything slowly for 1 to 2 hrs (excluding rice and water) in a large oven-ready pot on top of the stove, meaning a pot which can be eventually placed in the oven. The pork, chicken livers, and grnd beef will requiring draining of the fat and subsequent juices. save this for inclusion with the 2:1 parts rice and waterAdd the raw rice and liquid mix to the above mess.   2. (slow) oven and cover till rice is completely cooked and all liquid is absorbed. Stir frequently till all liquid is absorbed. This should take several hrs.
  3. When everything is dry, it's done. Serve with real Tabasco sauce.
  4. The author (unknown) said, "This stuff freezes extremely well, that is why I make huge batches. I prefer not to defrost the frzn dirty rice using a microwave. Instead, let thaw overnight in a refrigerator."
