Diabetic's Pumpkin Pie Recipe

Ingredients
1 baked & cooled 9" pie shell
2 sm. pkg. sugar-free instant vanilla pudding
2 c. lowfat milk
1 c. canned pumpkin
1 teaspoon pumpkin pie spice
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/2 teaspoon cinnamon
Directions
Blend all ingredients in blender till smooth. Use plain canned pumpkin. Don't use canned pumpkin pie mix. Pour into pie shell and refrigeratetill ready to serve.
