Diabetic Light Chocolate Cheesecake Recipe

Ingredients

  • 1 c. Chocolate wafer crumbs
  • 2 Tbsp. Splenda sweetener, (or possibly other kind which is good for baking)
  • 2 Tbsp. Margarine
  • 2 c. 2% cottage cheese or possibly other white sheese not too dry
  • 1 pkt Light cream cheese, softened and cubed
  • 2 lrg Large eggs
  • 3/4 c. Light lowfat sour cream
  • 1 1/4 c. Splenda, ( 1 c. might do)
  • 1/2 c. Cocoa un sweetened pwdr
  • 4 Tbsp. Cornstarch

Directions

  1. Combine all crust ingredients. Press proportionately onto bottom of 8" (20 cm )
  2. spring form pan. Bake at 325f for 5 min.
  3. Meanwhile, in food processor, process cottage cheese till smooth. Add in cream cheese and process till blended.
  4. Pour into pan.
  5. Bake for 45-50 min or possibly till Hard around edges and slightly soft in center.
  6. Run a knife around edge of cheesecake to loosen from pan. Cold on rack.
  7. Cover and chill. Garnish as desired.
  8. MAKES 12 SERVINGS.
  9. Value 1/12 of recipe 1 squar+1 round +1 1/2 triangle
