  • 1/2 c. uncooked rice, not instant
  • 1 (20 ounce.) can crushed pineapple in its own juice
  • 1 (3 ounce.) pkg. sugar-free fruit flavored gelatin
  • 1 c. boiling water
  • 1 c. (scant) pineapple juice, liquid removed from can
  • 1/4 c. minced maraschino cherries (if you like for color)
  • 1/2 pt. heavy cream

Directions

  1. Cook rice according to package directions. Drain and set aside. Drain pineapple, reserving 1 c. juice. Dissolve gelatin in boiling water. Add in pineapple juice. Stir in well liquid removed rice. The cooked rice will absorb the color and flavor of the gelatin. Mix well and refrigeratetill thickened, but not quite set. Add in liquid removed pineapple and cherries (if you like). Mix in cream which has been whipped. Chill. Serves 8.
