Ingredients
- 1/2 c. Grated carrot
- 1Â 1/4 c. Minced dates
- 1 c. Raisins
- 1Â 1/3 c. Water
- 1 tsp Cinnamon
- 1/4 c. Applesauce, unsweetened
- 1 tsp Grnd cloves
- 1 tsp Nutmeg
- 1 tsp Baking pwdr
- 2 c. Whole wheat flour
- 1 tsp Baking soda
Directions
- Preheat oven to 350 degrees. Place the carrots, dates, raisins, water, applesauce, cinnamon, cloves and nutmeg in a saucepan, bring to boil, reduce the heat, and simmer for 5 min. Cold. Stir the dry ingredients together. Combine the wet and dry mixtures and stir till well blended.
- Spoon the batter into an 8x8" nonstick cake pan and bake for 45-50 min.
- Makes 1 cake.
