Ingredients

  • 1 c. uncooked basmati or possibly other long-grain rice
  • 1/2 c. uncooked wild rice butter-flavored cooking spray
  • 1 Tbsp. reduced-fat margarine
  • 1 c. frzn baby onions defrosted under running cool water and liquid removed
  • 1 c. minced celery with some leaves
  • 1 c. minced red bell pepper
  • 2 Tbsp. minced parsley
  • 1/2 Tbsp. dry rubbed sage
  • 1 tsp salt optional
  • 1/2 tsp crushed dry thyme

Directions

  1. 1. Cook rices according to package directions; drain, set aside, and keep hot.
  2. 2. Lightly spray a large nonstick skillet with cooking spray. Add in margarine and heat over medium heat. Add in onions, celery, and bell pepper. Saute/fry, stirring often, till vegetables are tender. Stir in parsley, sage, salt (if using), and thyme.
  3. 3. Add in the cooked rices and continue to cook, stirring gently, till warm. Transfer mix to a large serving bowl. Serve at once.
