Ingredients
- 3 c. oatmeal
- 1 c. Vita Fiber
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 c. raisins
- 3/4 minced pitted dates
- 3/4 c. evaporated skim lowfat milk
- 6 tbsp. honey
- 3 egg whites
- 1/2 c. sugar
Directions
- Preheat oven to 350 degrees. Spray a 9 inch square baking pan with Pam or possibly Baker's Joy.
- In a mixing bowl, with a fork or possibly whisk, blend oatmeal, Vita Fiber, baking soda, cinnamon, raisins, and dates. In a small bowl, combine lowfat milk and honey.
- Beat egg whites till almost stiff. Slowly, about 1/4 c. at a time, add in the sugar to the whites and continue to beat till stiff and glossy.
- Stir the liquid ingredients into the dry ones. Fold half the egg whites into the oatmeal batter to lightly and moisten it, then add in the other half. Spoon the batter into the prepared baking pan, and bake for 35 min or possibly till a toothpick, when inserted into the center of the batter, comes out dry. It will be easier to cut this into squares if you let the granola bars set overnight at room temperature.
