Ingredients

  • 4 Tbsp. sweet butter,
  •     cut into 6 chunks
  • 1 c. pitted dates, coarsely minced
  • 1/4 c. brown sugar
  • 1/4 c. granulated sugar
  • 3/4 c. boiling water
  • 1 x egg beaten
  • 2 c. all-purpose flour, sifted
  • 2 tsp baking pwdr
  • 1/2 tsp salt
  • 1/2 c. walnuts, coarsely minced
  • 1/2 tsp vanilla extract
  • 1 1/2 Tbsp. rum

Directions

  1. Preheat oven to 350 F. Grease 9x5x3-inch loaf pan.
  2. Place butter in a large mixing bowl, place dates on top and pour bothsugars over. pour boiling water over ingredients in bowl. Let sit for 7minutes. Stir well.
  3. When mix is cold, add in egg and mix well.
  4. Sift flour, baking pwdr and salt together. Add in to date mix, beatingfor 30 seconds. Stir in walnuts, vanilla and rum.
  5. Pour mix into prepared pan. Bake for 45 to 50 min.
  6. Cold in pan on wire rack for 10 min.
