Danish Pancakes (Pandekager) Recipe

Ingredients

  • 4 lrg Large eggs separated
  • 4 c. all-purpose flour
  • 1 tsp salt
  • 1/4 c. sugar
  • 3/4 c. beer
  • 2 c. lowfat milk
  • 1 Tbsp. melted butter Strawberry preserves for serving

Directions

  1. In mixing bowl beat egg white till stiff; set aside.
  2. In another mixing bowl, beat egg yolks till thick and lemon-colored, add in flour and mix well. Add in beer, lowfat milk, salt and butter and beat till smooth. Carefully mix in egg whites.
  3. Pour a little batter in 6-inch greased skillet. Rotate skillet to spread batter over surface. Brown on both sides. Repeat till all batter is used. Serve warm with strawberry preserves.
  4. This recipe yields about 18 pancakes.
  5. Yield: 18 pancakes
