Directions

  1. Heat vegetable oil and saute/fry the first 4 ingredients just till tender. Add in tomatoes, cook 1 minute more. Stir in paprika, cayenne, salt, pepper, water, bay leaf. Simmer for 15 min. Add in shrimp, continue for an additional 10 min. Thicken with cornstarch mixed with 3 Tbsp. cool water. Serve with steamed white rice. Serves 8 to 10.
