Ingredients

  • 1 1/2 stalk celery
  • 1 sm Onion
  • 3/4 x Green pepper
  • 3 lb Lean grnd beef
  • 1 x Egg Cracker meal
  • 1 can Tomato Bisque or possibly Tomato Rice Soup, undiluted Salt and pepper

Directions

  1. Chop onion, celery, and green pepper finely (I do this in the food processor...Dad still uses the old wooden bowl and hand chopper). Mix grnd beef, minced vegetables, egg and half can soup. Add in sufficient cracker meal to hold together. Shape into 2 loaves and place on baking sheet. Top with remaining undiluted soup.
  2. Bake at 325 degrees for 1-1/2 hrs
  3. Makes 2 large meatloaves
  4. NOTES : The main thing to remember with meatloaf is do not overmix it. It will come out dry if overmixed. Be sure to add in only sufficient cracker meal to help hold the mix together. Freezes beautifully. Cold and wrap well in aluminum foil, place in a ziplock or possibly plastic back to protect from any freezer burn and freeze.
