Custard Filling

This is perfect to use as a filling for pies or tarts. Decorate with fresh fruit and everyone will think you bought a dessert!

Ingredients

  • 1/4 c. sugar
  • 3 tbsp. cornstarch
  • 2 c. lowfat milk
  • 3 egg yolks, slightly beaten
  • 1 teaspoon vanilla

Directions

  1. In 1 qt sauce pan, mix sugar and cornstarch.
  2. Gradually stir in lowfat milk till smooth.
  3. Add in slightly beaten egg yolks.
  4. Stirring constantly bring to boil over medium - low heat and boil 1 minute. Remove.
  5. Stir in vanilla. Cover surface directly with plastic wrap and chill until cold.
