Ingredients

  • 1 lg. cucumber, peeled, seeded and diced
  • 1/4 c. sweet onion, chopped
  • 1 canned whole green chili, chopped
  • 2 tbsp. minced parsley
  • 2 tbsp. fresh lime juice
  • 1/4 teaspoon salt
  • 1/2 c. chutney

Directions

  1. In bowl, combine all ingredients for relish except chutney; set aside. Makes 1 1/2 c. of relish.
  2. Combine first 8 ingredients for meatballs. Shape into 1 inch balls and flatten slightly. Makes 20 meatballs. In large skillet, heat salad oil over medium heat. Add in meatballs and cook for 4 min each side, shaking pan occasionally to keep meat from sticking. To serve, stuff 3-4 meatballs into PITA BREAD. Add in relish and chutney. Makes 5 servings.
