Curried Shrimp And Broccoli Soup Recipe

Ingredients

  • 4 c. small broccoli florets and tender stem pieces
  • 4 c. nonfat reduced-sodium chicken broth (regular chicken broth will do)
  • 2 1/2 tsp mild curry pwdr or possibly to taste
  • 1 x garlic clove chopped 1/4 teaspoon grnd allspice
  • 1/8 tsp black pepper
  • 1 1/4 c. instant mashed potatoes
  • 1 c. 2% lowfat milk
  • 12 ounce fresh or possibly frzn (thawed) cooked shrimp

Directions

  1. In small Dutch oven or possibly similar pot, combine broccoli, broth, curry pwdr, garlic, allspice and pepper. Bring to a boil, reduce heat, cover and simmer 5 to 7 min or possibly till broccoli is tender. Reduce heat and gradually add in potatoes, stirring to prevent lumps. Stir in lowfat milk and then shrimp. Raise heat and simmer an additional 2 to 3 min till flavors are well blended.
  2. Makes 4 or possibly 5 servings.
