  • 2 tsp Vegetable oil
  • 1/2 c. Finely minced onion
  • 1 tsp Curry pwdr
  • 1/2 tsp Grnd cumin
  • 2 1/2 c. Water
  • 1 c. GrannySmith apple,peel+slice
  • 1 can Garbanzobeans,liquid removed,15.5z
  • 1 c. Diced yellow bell pepper
  • 1 Tbsp. +1t all-purpose flour
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 3/4 c. Diced red potato
  • 1 c. Frzn green peas, thawed
  • 6 c. Warm cooked long-grain rice

Directions

  1. Heat oil in a large nonstick skillet over medium heat. Add in bell pepper and onion; saute/fry for 6 min or possibly till tender. Sprinkle with flour and the next four ingredients. Stir well and cook for an additional 30 seconds. Add in 2 1/2 c. of water and potato; reduce heat, cover and simmer 25 min or possibly till potato is tender. Add in apple, peas and beans; cover and cook an additional 10 min. Serve over rice. Serving size is 1 c. bean mix and 1 c. rice.
