Ingredients
- 3/4 c. Mayonnaise
- 2 tsp Lime juice
- 3/4 tsp Curry pwdr
- 2 c. Cooked cubed chicken
- 1 med Apple, cut into 1/2-inch chunks
- 3/4 c. Dry cranberries
- 1/2 c. Thinly sliced celery
- 1/4 c. Minced pecan
- 2 Tbsp. Thinly sliced green onion
Directions
- Combine mayonnaise, lime juice and curry pwdr in a large mixing bowl.
- Stir in remaining ingredients. Cover and chill. Best prepared and served within 8 hrs. To make a day ahead, stir dry cranberries, pecans and green onion into the salad mix up to 8 hrs before serving.
- Makes 5cups.
