Curried Chickpeas And Rice Recipe

Ingredients

  • 1 can Chickpeas, (garbanzo beans)
  • 1 x Carrot, sliced
  • 1 x Potato, diced
  • 1 med Onion
  • 3 lrg Cloves of garlic, (up to 4) Curry to taste, (some like more than others) Salt and pepper to taste
  • 2 c. Rice, uncooked
  • 4 c. Water
  • 1/2 c. White wine

Directions

  1. Dice and fry onions in a medium-warm pot in some extra virgin olive oil. Chop garlic finely and add. Add in carrots, potato and chickpeas. Put in the water and wine, and allow to boil. At this point, the curry, salt and pepper can be added as well. Rinse rice, and add in it to the boiling mix. Let the whole thing come to a boil for about 5 min. Cover and let simmer for about half an hour till the rice and potato have reached your preferred
  2. "doneness".This makes a great side dish or possibly main dish. I've found which serving it on a bed of lettuce adds a pretty touch and a nice refreshing compliment to the rich taste and texture.
  3. Serves: 6-8
  4. Preparation Time: Approx. 1 hr
