Directions

  1. In saucepan, heat butter; saute/fry onion and apple till soft. Sprinkle with curry pwdr. Cook, stirring for a few seconds.
  2. Pour in chicken stock; bring to boil, add in rice, zucchini and salt. Cover and cook till rice and zucchini are tender, about 30 min.
  3. Pour in blender and blend till smooth, return to pan and add in lowfat milk, heat through. Serve warm.
