Ingredients

  • 1 c. warm water
  • 2 1/4 t. yeast
  • 2 t. honey
  • 3 to 3 1/4 c. flour
  • 1 T. extra virgin olive oil
  • In the bowl of a stand mixer, stir together water, yeast and honey. Let set for 5 minutes.
  • Using the dough hook, mix in 3 cups of flour and olive oil. Knead with dough hook for about 5 minutes. Add more flour if necessary.
  • The dough should be smooth and shiny.
  • Place dough in an oiled bowl and let rise until doubled (30-45 minutes).
  • Preheat oven to 400 degrees.
  • For the toppings:
  • 1/4 to 1/2 c. hummus
  • 1 large tomato, sliced
  • 1 baby eggplant, sliced into 1/2 inch slices and roasted
  • (To roast eggplant, slice and toss in olive oil. Spread on baking sheet and roast 20 minutes in 400 degree oven until just soft.)
  • 1/4 c. chopped Kalamata olives
  • 4 oz. goat cheese
