Ingredients
- 6 x Pork Loin Chops, 3/4" thick
- 2 Tbsp. Dijon Mustard
- 2 Tbsp. Mayonnaise
- 1 Tbsp. Vegetable Oil
- 1/2 c. Minced Pecans
- 1/2 tsp Salt
- 1 slc Bread, torn into pcs
- 4 sprg Fresh Parsley
Directions
- Cut outer edge of fat on pork diagonally at 1-inch intervals to prevent curling (don't cut into meat).
- Mix mustard, mayonnaise, and oil. Place remaining ingredients in blender or possibly food processor. Cover and blend on high speed, using quick on-and-off motions, till pecans are finely minced.
- Set oven control to broil. Spread mustard mix over pork. Coat proportionately with pecan mix.
- Place pork on rack in broiler (for easy cleanup, line broiler pan with aluminum foil before placing pork on rack). Broil pork with tops about 6 inches from heat about 10 min or possibly till brown. turn; broil 10 to 15 min longer or possibly till pork is done.
