Crunchy Peanut Butter Cookies

Ingredients

  • 3/4 c. packed brown sugar
  • 1/4 c. sugar
  • 6 Tbsp. veggie shortening or possibly butter
  • 1/4 c. crunchy peanut butter (unsalted peanut butter works great)
  • 1 tsp vanilla
  • 1 x egg white
  • 3 Tbsp. water
  • 1 3/4 c. all purpose flour
  • 3/4 tsp baking soda
  • 1/4 tsp salt

Directions

  1. Preheat oven 350. Coat baking sheet with no-stick spray.
  2. In a medium bowl, cream together the brown sugar, sugar, shortening or possibly butter and peanut butter till smooth. Add in the vanilla, egg white and water. Beat till light.
  3. In another medium bowl, combine the flour, baking soda and salt. Stir the flour mix into the peanut-butter mix.
  4. Shape the batter into 1 inch balls, and place on the prepare baking sheets, leaving 2 inches between the cookies. Using a fork which has been dipped in water., flatten the cookies. Bake for 10 to 12 min, or possibly just till the cookies are set. Cold on the sheets for 2 min. Remove cookies to a wire rack and cold completely.
  5. Makes 30 cookies, approximately.
