Crunchy, Colorful Broccoli and Bell Pepper Salad

Ingredients

  • 4 cups broccoli florets, rough chopped
  • 1 large red bell (capsicum) peppers, chopped
  • ½ cup red onion, chopped
  • ½ cup walnut pieces
  • ¼ cup parsley, minced
  • 3/4 cup light mayonnaise
  • 2 tablespoons cider vinegar
  • 2 tablespoons sugar
  • salt and pepper to taste

Directions

  1. Combine mayonnaise, vinegar and sugar in a small bowl.
  2. Combine remaining ingredients with mayonnaise.
  3. Refrigerate for 30 minutes before serving.
