Ingredients
- 2 c. Lowfat chicken broth
- 8 ounce No salt added tomato sauce
- 1 c. Minced onions
- 2 x Cloves garlic, chopped
- 1 Tbsp. Fresh ginger root, chopped
- 2 Tbsp. Fresh lemon juice
- 2 tsp Curry pwdr
- 1/2 tsp Grnd nutmeg
- 1/2 tsp Grnd cumin
- 1/2 tsp Grnd cardamom
- 1/4 tsp Grnd cloves
- 1/4 tsp Cayenne pepper
- 1/4 c. Orange marmalade
- 1/4 c. Major Grey Mango Chutney
- 1/2 c. Golden brown raisins
- 4 x Boned and skinned chicken breast halves
- 2 c. Long-grain white rice, cooked
Directions
- Combine all ingredients, except rice, in 5 qt crockpot. Cook on low setting for 8-10 hrs.
- Cook rice on stovetop according to package directions. Serve cooked chicken curry with cooked rice.
