Croatian roux soup

Very old recipe for a soup still popular in the northwestern parts of Croatia.

Ingredients

  • 2 tbs sunflower oil
  • ½ tsp caraway seeds
  • 3 tbs flour
  • 2 tsp sweet paprika
  • 4 cups water (about 1 l)
  • 2 tsp salt
  • 2 tsp wine vinegar

Directions

1. Sauté briefly caraway seeds in hot oil (until they begin to "crack") in a soup pot.
2. Add flour all at once. Whisk constantly while it bubbles over medium heat. Make medium dark roux.
3. Stir in red paprika.
4. Add one cup of water and allow to boil without stirring. After it boils, whisk until the mixture blends smoothly. Gradualy add the remaining water, stiring well after each addition. Cook for 5 more minutes.
5. Season with salt and add the vinegar just before the end of cooking.
6. Serve with homemade croutons, or egg drippings.
