Hey y'all I bring you another tasty recipe. This time this one is my own creation. It actually almost didn't happen. This recipe was a recycled recipe that was modified. Paula Dean had a recipe contest for Smithfiield foods and I entered this recipe except without the sweet potato. When I didn't win the Smithfield contest, I saw the contest for canned sweet potato., I modified and tested it to make sure it tasted good. I wasn't sure how well this one would be received, so I sat on the recipe not sure if I wanted to submit it. On the last day, I thought what the hay, the worst that could happen is they wouldn't pick it. I then proceeded to enter it. Then honestly, I forgot about it. In fact I didn't even save it on my zip drive like I do with all my other recipes.


A few months later I get this Gigantic and heavy envelope from the Louisiana Sweet Potato Commission. I opened it and there was this plaque with this beautiful picture on it and my name engraved on the bottom. I started jumping up and down yelling I WON! I WON! It was the Sweet rewards Recipe Contest for Canned Louisiana Sweet Potatoes. It garnered me this gorgeous picture on a plaque with my name on it. After I finished jumping around, I looked closer in the envelope, I found a check for $500.00 the most I have ever won in a contest. I sure was excited. It felt good to win. I love when I win contests. It is always so unexpected. Almost like a Christmas present. That $500.00 was a God send. He really does works in mysterious ways. If you get an chance to try it, I think you will really enjoy it. All of the ingredients you will find in your local supermarket.

Directions

  1. Heat the oil to 325ºF.
  2. In a medium bowl combine the cornmeal, flour, sugar and salt. In a small bowl combine the
  3. milk and eggs. Add the milk mixture to the cornmeal mixture. Stir in the vegetable oil, yams
  4. and pork.
  5. Pour peanut oil to a depth of 2 inches in a Dutch oven or use a deep fryer. Drop by spoonful
  6. into hot oil. Cook 2 to 4 minutes, or until golden, turning once. Drain on paper towels.
  7. Serve warm with apple honey butter.
