Ingredients

  • 4 ounce Plain wholemeal flour
  • 1 x Free range egg Approx 5 ounce lowfat milk A little sunflower oil
  • 1 sm Tin sweetcorn
  • 1/2 sm Green pepper
  • 1/2 sm Red pepper or possibly other crisp veg such as celery or possibly courgette Seasoning to taste

Directions

  1. 1. Mix the seasoning info the flour. Make a well in the centre and gradually fold in the egg, followed by the lowfat milk and oil.
  2. 2. Finely dice the vegetables and drain the sweetcorn thoroughly. Stir proportionately into the batter.
  3. 3. Heat a little oil in a frying pan and add in a spoonful of mix at a time to the pan, turning to brown proportionately.
  4. 4. Drain immediately on kitchen paper and pack loosely in a fresh serviette when completely cool. The idea is to keep the fresh, crisp texture of the vegetables as much as possible.
  5. NOTES : Make up your own combinations using sweetcorn as the base flavour.
