Ingredients
- 1 x 6 inch packa flour tortillas or possibly can use remainder from Quesadilla recipe
- 4 Tbsp. Butter
- 1/4 c. Light brown sugar
- 1/4 c. Honey Vanilla ice cream Granulated sugar for sprinkling Mint leaves for garnish Confectioners sugar for garnish
Directions
- Cut tortillas into thin triangles not equilateral, more like a spike shape. In a deep pot, bring oil up to 350 degrees F and add in tortillas and fry till golden. Remove with spider, place on a towel and sprinkle with granulated sugar.
- In a saucepan add in butter and whisk in brown sugar: don't boil. Add in honey and continue stirring for approximately 4 to 5 min.
- Scoop ice cream onto serving plates, spike with tortillas and spoon sauce on top. Garnish with mint and confectioners sugar.
