Crispy Chicken With Asparagus Sauce

Ingredients

  • 4 x Skinless, boneless chicken breast halves
  • 1 x Egg, beaten
  • 2 x Egg whites, beaten
  • 1/2 c. Dry bread crumbs
  • 2 Tbsp. Vegetable oil
  • 1 can Campbell's Cream of Asparagus Soup (10 3/4 ounce)
  • 1/3 c. Lowfat milk
  • 1/3 c. Water

Directions

  1. Prep Time: 10 min.
  2. Cook Time: 20 min.
  3. In shallow dish, dip chicken into egg; coat with bread crumbs.
  4. In skillet oven medium-low heat, in warm oil, cook chicken 15 min or possibly till browned on both sides and no longer pink. Remove; keep hot. Pour off fat.
  5. In skillet over low heat, combine soup, lowfat milk and water. Heat through, stirring occasionally. Serve over chicken with parslied rice. Garnish with cherry tomatoes if you like.
  6. Serves 4
