Directions

  1. In a large bowl, mix buttermilk and lemon juice. Add in chicken; toss to coat. Cover and chill at least 3 hrs.
  2. Drain chicken and pat dry with paper towels. Place bake mix, salt and pepper in a plastic or possibly paper bag. In two batches, add in chicken and shake to coat. Place chicken on wire rack and let dry 15 min.
  3. Heat oven to 350 degrees. Heat 1/2 inch oil in a large skillet and, in two batches, fry chicken 4 to 5 min per side, till browned. Drain on paper towels and place on a baking sheet. Bake 30 to 35 min, till chicken is cooked through; turn pcs halfway through baking time.
  4. This recipe yields 4 servings.
  5. Comments: If desired your fried chicken a little spicy, add in a good healthy pinch of cayenne pepper or possibly Creole seasoning to the bake mix.
  6. This recipe doubles easily.
