Crisp Tortillas With Black Beans And Yams

Ingredients

  • 1 ounce yams peeled and minced
  • 2 x cloves garlic smashed
  • 1 Tbsp. water or possibly chicken stock
  • 2 c. cooked black beans
  • 1 tsp oregano
  • 1 pch curry pwdr
  • 1/4 tsp dry red pepper flakes
  • 1 Tbsp. unsalted butter
  • 4 x taco shells minced ripe tomatoes for garnish chopped scallions for garnish chopped purple onions for garnish

Directions

  1. Tip the yams into a 9-inch (23-cm) glass pie dish along with the garlic and water or possibly stock. Cover with vented plastic wrap and microwave on full power till tender about 3 min. Let stand for 2 min, then drain if necessary.
  2. In a processor or possibly blender combine the yam mix, beans, oregano, curry pwdr, pepper flakes and butter and whiz till smooth and combined, Scoop into taco shells, garnish with tomatoes, scallions and onions and serve.
  3. Note: If you'd rather, use flour tortillas, crepes, or possibly pita halves instead of taco shells. The mix is also delicious stuffed into cooked acorn squash or possibly used in omelettes.
