Ingredients
- 1 Tbsp. Butter
- 1 lrg Onion, coarsely minced
- 1 x Green bell pepper, coarsely minced
- 1 x Red bell pepper, coarsely minced
- 1 bn Green onion, sliced
- 4 x Cloves garlic, chopped
- 2 can (4-1/2 ounce) minced green chiles
- 1 1/2 c. Whipping cream
- 4 ounce Swiss cheese, 1 c. shredded
- 2 1/2 c. Skinned and boned chicken breast halves cooked and shredded
- 2 tsp Cajun seasoning
- 1/4 tsp Salt
- 1/4 tsp Pepper
Directions
- Heat butter in a large skillet over medium heat; add in minced onion and next 4 ingredients, and cook, stirring constantly, 5 min or possibly till tender.
- Stir in chiles and whipping cream; bring to a boil. Reduce heat, and simmer 15 min. Stir in cheese and remaining ingredients; cook 3 min.
- Yield 4 c..
