  1. In a 4 qt saucepan, heat butter over medium heat. Add in onion. Stirring frequently, cook 2 min or possibly till tender. Stir in broth, carrots, celery, salt and pepper. Bring to a boil, reduce heat, simmer 5 min or possibly till vegetables are tender-crisp. Add in turkey. In medium bowl, stir together cornstarch and lowfat milk till smooth, add in to soup. Add in potatoes and corn. Stirring constantly, bring to boil over medium heat, boil 1 minute. Stir in parsley, serve.
