Ingredients
- 1 pkg. (4 serving size) Jell-O brand vanilla pudding & pie filling (not the instant) sugarless
- 4 c. skim lowfat milk
- 1/4 c. Eggbeater (or possibly 1 egg, well beaten)
- 1 c. dry Minute rice
- 1/4 c. raisins (optional)
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
Directions
- Gradually stir lowfat milk and Eggbeater into pudding in a saucepan. Add in rice and raisins. Stir over medium heat till mix just comes to a boil. Pour into bowl. Cover with plastic wrap over bowl. Refrigerateabout 1 hour. Stir and serve with Cold Whip.
