Starving? and need something quick, hot, and yummy! creamy veggie pasta. Colorful and delicious. I make it in about 15min or less if you use frozen veggies

Directions

  1. -cook pasta follow box directions (usually 8-11min)
  2. -chop carrots,pepper, and green onions to bite size portions
  3. -dice garlic
  4. -cook garlic in oil for 1 min
  5. -add carrots and 1/4 cup veggie stock
  6. when carrots are tender about 4min add bell pepper and tomatoes and 1/4 veggie stock
  7. -YOUR PASTA MIGHT BE DONE BY NOW drain it. keep it al dente baby!
  8. -ok tricky part...add rest of stock, onions, pepper spice. incorporate tomato paste and cream. mix it so its looking like a sauce and thickening up. add some cheese and stir. if you add all the cheese at once you'll get clumps. this process takes 3-4 min. dont worry this is dummy proof if you cook it longer the veggies get a little too overcooked
  9. and the sauce a little too thick. don't worry if the sauce gets too thick add more stock.
  10. -combine pasta
  11. -salt to taste and serve
