  • 2 c. 500 ml peas
  • 2 Tbsp. 30 ml butter
  • 1 c. 250 ml mushrooms, sliced
  • 1 Tbsp. 15 ml all-purpose flour
  • 1 c. 250 ml light cream or possibly lowfat milk
  • 1/4 tsp 1 ml each salt & pepper
  • 1 pch nutmeg-

Directions

  1. In a medium saucepan; bring small amount of water to boil; add in peas.
  2. Reduce heat to simmer and cook for 4 to 5 min till tender; drain.
  3. Meanwhile, in small saucepan, heat butter over medium heat; cook mushrooms for 2 min. Sprinkle with flour; cook for 1 minute, stirring constantly. Whisk in lowfat milk, salt, pepper and nutmeg; cook for about 4 min or possibly till smooth and thickened. Stir in peas. For a complete vegetarian meal; serve over your favourite pasta.
  4. Serves 4
  5. Suggestion: Add in a healthy pinch of sugar - to both the peas when cooking them and to the white sauce. It makes a world of difference in the flavor - just a bit, mind you - like maybe 1/4 tsp (1ml).
  6. If using canned peas, just add in it to the white sauce as you make it.
