Creamy Ginger Tomato Soup Recipe

Ingredients

  • 4 c. boxed strained tomatoes
  • 1/2 c. evaporated skim lowfat milk
  • 1/4 c. ginger grated
  • 2 Tbsp. ginger grated salt grnd black pepper to taste fresh chives snipped, for garnish

Directions

  1. In a medium saucepan, combine the tomatoes and evaporated lowfat milk. Wrap the ginger in paper toweling and squeeze the juice into the pan. Cook over medium heat for 4 to 5 min, stirring occasionally, till steaming.
  2. Season with salt and pepper. Ladle 1 c. into each of 4 soup bowls and garnish with the chives.
  3. NOTES : An easy homemade soup.
