Creamy Chicken Stir Fry

Ingredients

  • 1 lb skinless boneless chicken breast in strips
  • 3 c. vegetables cut up *
  • 1 can Reduced fat Cream of Mushroom Soup
  • 1/4 can water
  • 1 Tbsp. soy sauce
  • 4 c. cooked rice

Directions

  1. Spray skillet with vegetable cooking spray and heat over Medium-High heat for 1 minute.
  2. Add in chicken in 2 batches and stir-fry till browned. Set chicken aside.
  3. Remove pan from heat Spray with cooking spray. Reduce heat to Medium. Add in vegetables and stir fry till tender-crisp. Add in soup, water and soy sauce.
  4. Heat to boiling. Return chicken to pan and heat through. Serve over warm cooked rice.
  5. Use any combination of broccoli flowerets, sliced carrots, mushrooms, green and/or possibly red bell peppers.
