Creamy Chicken And Spinach Pasta

Ingredients

  • 3 x Boned and skinned chicken breasts
  • 1 tsp Oil
  • 2 pkt Minced spinach, thawed
  • 1 c. 2% low-fat lowfat milk
  • 1 c. Chicken broth
  • 1 tsp Dry thyme
  • 1 tsp Dry basil
  • 1/2 lrg Yellow onion, finely minced
  • 3 x Green onions, finely minced
  • 4 lrg Cloves garlic, finely minced
  • 1 dsh Tabasco sauce
  • 3 c. Pasta, cooked and liquid removed
  • 2 Tbsp. Cornstarch
  • 1/2 c. Parmesan cheese
  • 1 c. Mozzarella cheese, shredded
  • 2 tsp Salt
  • 1/2 tsp Fresh grnd black pepper
  • 1/2 c. Dry white wine

Directions

  1. Brown chicken breasts in skillet with oil. Remove chicken from skillet and cut in to chunks. Place yellow and green onions in chicken skillet and cook till yellow onions are translucent/soft. Add in the thyme, basil, garlic, chicken, chicken broth and tabasco sauce. Cook for 10 min. Add in the spinach, salt, pepper, lowfat milk, and parmesan cheese. Mix well and cook till cheese melts. In a small bowl combine cornstarch and dry while wine and mix well.
  2. Remove chicken mix from heat and fold in the cornstarch and wine mix. Place back on stove and cook till mix thickens. In a square casserole dish put spread around 1/3 of the chicken mix. Add in a c. of pasta and then a 1/3 c. of the mozzarella cheese. Then add in 1/2 of the chicken mix, another layer of pasta and 1/2 the mozzarella cheese. Then add in the rest of the chicken mix, the last c. of pasta and the last of the mozzarella cheese. Bake in the oven at 350 degrees for 20 min.
