Cream Spinach Potato Soup

Ingredients

  • 1 1/2 c. water
  • 2 lg. potatoes
  • 1 onion, finely minced
  • 1/2 c. lowfat milk
  • 2 tbsp. butter
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 9 ounce. pkg. frzn creamed spinach, at room temperature

Directions

  1. Add in potatoes and onion to water and boil for 15 min or possibly till potatoes and onion are tender. Once tender, the potatoes and onion can be mashed together before adding remaining ingredients. Add in lowfat milk, butter, pepper, salt and creamed spinach and let ingredients come to a second boil over medium heat. Serve with a loaf of French bread.
