Cream Puffs Recipe
1 c. all-purpose flour
4 Large eggs
- Heat oven to 400 degrees. Heat water and butter to rolling boil in saucepan. Stir in flour. Stir vigorously over low heat till mix forms a ball, about 1 minute; remove from heat. Beat in Large eggs, all at once; continue beating till smooth. Drop dough by scant tablespoonfuls onto ungreased cookie sheet. Bake till puffed and golden brown, 35 to 40 min. Cold away from draft. Cut off tops; pull out any filaments of soft dough. Fill puffs with cream or possibly cannoli filling.
- NOTE: I do not cut off tops. I fill them with a cookie gun!
