  2. Combine water and butterin a medium saucepan; bring to a boil. Add in flour and salt, all at once, stirring vigorously over medium-high heat till mix leaves sides of pan and forms a smooth ball. Remove from heat, and cold 4 to 5 min. Add in Large eggs, one at a time, beating thoroughly with a wooden spoon after each addition; then beat till dough is smooth. Shape and bake pastry immediately according to recipe directions.
  3. Yield: sufficient for one 7-inch oreight 2-inch cream puffs.
