Cream Filled Valentine Cupcakes Recipe

Ingredients

  • a can of frosting and sprinkles in my house:)
  • 1 box (15 oz) Pillsbury Valentine's Funfetti Cake Mix
  • Whole egg~
  • 1 cup water
  • 1/2 cup oil
  • 3 eggs
  • or
  • Egg White~
  • 1-1/4 cups water
  • 1/2 cup oil
  • 4 egg whites
  • 24 cupcake liners, (white and pink)
  • Set oven to 350
  • Place paper cupcake liners into 2 cupcake pans
  • Each pan should make 12 cupcakes
  • Combine cake mix, water, oil and eggs in large bowl
  • Mix until moistened
  • Beat with mixer on medium speed for 2 minutes
  • Pour batter into paper liners with a large spoon
  • Fill 1/2 full
  • Bake at 350 degrees
  • For 19 to 23 minutes
  • Remove cupcakes from pan
  • Cool completely on wire racks
  • Fill with cream filling~
  • Cream Filling~
  • 1/2 cup milk
  • 2 T flour
  • 1/2 cup vegetable shortening
  • 1/2 cup sugar
  • 1/2 t vanilla
  • 1/2 cup powdered sugar
  • In a small saucepan, whisk flour into milk until there aren't any lumps
  • Heat milk and flour on medium low heat
  • Stirring constantly until mixture thickens to a gravy like consistency
  • Spoon mixture from hot pan into a small bowl
  • Cover with saran wrap
  • Allow to cool to room temperature
  • In a mixing bowl, cream shortening and sugar about 5 minutes
  • Add cooled milk-flour mixture
  • Beat until fluffy and sugar is dissolved completely
  • About 5 minutes
  • Be sure to beat until the grains of sugar are dissolved
  • If in doubt, whip more
  • Add vanilla and powdered sugar
  • 1 can (15 oz) Pillsbury Valentine's Funfetti Vanilla Frosting with Sprinkles
