Ingredients

  • 2 c. Rotelli pasta -- cooked
  • 4 Tbsp. Butter
  • 1/2 c. Green onions -- minced
  • 1/2 c. Polish sausage -- minced
  • 1 Tbsp. Garlic -- chopped
  • 1/4 tsp Cayenne pepper
  • 1/2 tsp Black pepper
  • 1 c. Heavy cream
  • 2 ounce Dixie (or possibly other) beer
  • 1 lb Cooked crawfish tails
  • 1 Tbsp. Parsley -- minced Salt to taste

Directions

  1. Meanwhile, saute/fry green onions and sausage in butter till onions are tender but not browned. Add in garlic and saute/fry for 1 minute. Add in peppers, cream and beer. Simmer, stirring till slightly thickened, for about 5 min. Add in crawfish simmer 2 to 3 min, stirring. Add in salt to taste, toss in pasta and parsley and serve. (wrv)
