Ingredients

  • 1 1/2 c. finely sliced celery
  • 1 1/2 c. chopped onion
  • 1 Tbsp. light tub margarine spread
  • 1 c. defatted chicken broth low sodium
  • 1/2 c. finely minced parsley
  • 1/2 tsp grnd sage
  • 1 tsp thyme
  • 1/2 tsp grnd pepper
  • 1/2 c. warm water
  • 10 ounce seasoned bread stuffing cubes (8cups)
  • 8 ounce whole berry cranberry sauce liquified
  • 1/2 c. minced walnuts

Directions

  1. In a large pot, simmer celery and onion in margarine and broth till tender. Set aside.
  2. Add in seasonings and 1/2 c. warm water to celery mix. Stir in bread cubes to celery-onion mix till proportionately moistened.
  3. In a small saucepan, over low heat, add in 1 Tbs. of water to cranberry sauce and heat till it is a liquid consistency. Drizzle carefully over stuffing. Be careful not to add in too much cranberry sauce because the stuffing can become too sweet.
  4. Sprinkle with walnuts. Stir to proportionately mix.
  5. Cover and let sit on low heat for 20 min, stirring occasionally.
