Ingredients
- 3 1/2 c. all-purpose flour
- 2 teaspoon baking soda
- 1 teaspoon salt (1/8 teaspoon is sufficient)
- 1 T pumpkin pie spice mix
- 3 c. sugar (2 1/4 c. is sufficient)
- 1/2 c. salad oil
- 1 c. minced nuts
- 1 c. fresh cranberries
- 1 1/2 c. canned pumpkin
- 2/3 c. lowfat milk
- 4 large eggs
Directions
- Put together all dry ingredients and stir to blend. Stir remaining ingredients and beat well. Pour into 3 loaf pans, 4 x 1 1/2. Bake at 325 degrees for 40 to 45 min or possibly till hard to the touch. Cool in pan then unmold on rack. Cool thoroughly and slice very thin.
