Ingredients

  • 1/4 c. all-purpose flour
  • 1/4 c. cornmeal
  • 1/4 c. granulated sugar
  • 1/4 c. packed light brown sugar
  • 1/4 c. chilled butter or possibly stick margarine cut into small pcs
  • 7 c. diced peeled Rome apple (about 3 pounds)
  • 1 c. fresh or possibly frzn cranberries
  • 2 Tbsp. granulated sugar
  • 2 tsp grated orange rind
  • 3 Tbsp. orange juice

Directions

  1. Preheat oven to 375 degrees.
  2. Lightly spoon flour into a dry measuring c.; level with a knife. Combine flour, cornmeal, 1/4 c. granulated sugar, and brown sugar in a bowl; cut in butter with a pastry blender or possibly 2 knives till mix is crumbly.
  3. Combine apple and remaining ingredients in a large bowl; toss well. Spoon the apple mix into an 8-inch square baking dish or possibly 1-1/2-qt casserole. Sprinkle with the crumb mix. Bake at 375 degrees for 45 min or possibly till golden.
  4. Yield: 9 servings.
