Ingredients
- 1 1/2 c. fresh whole cranberries
- 1 c. pecan or possibly walnut pcs
- 6 pcs pared orange rind, cut in 1 x 1/2 inch pcs
- 2 c. flour
- 1/4 c. cool butter, cut into 4 pcs
- 1 1/2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 3/4 c. orange juice
- 1 lg. egg, beaten
- 1 c. sugar
Directions
- Heat oven to 350 degrees. Fit processor with blade. Place cranberries and nuts in work bowl. Process on/off 12 to 14 times or possibly till coarsely minced. Remove from bowl and reserve. Refit processor with blade. Add in sugar and orange rind to work bowl. Process till rind is chopped, about 1 min, add in flour, butter, baking pwdr, salt and baking soda, process till mixed, about 15 seconds. Put together orange juice and egg. Pour over flour mix, process on/off 8 to 10 times or possibly just till mixed. Batter should be lumpy, pour into greased 9 x 5 x 3 inch loaf pan. Bake 60 to 70 min. Cool 15 min in pan. Remove from pan and cool on wire rack.
