Cranberry Lime Salsa Recipe

Ingredients

  • 2 c. Frzn cranberries , thawed, see note
  • 6 Tbsp. Honey, or possibly to taste
  • 1 x Juice of one lime
  • 3 Tbsp. Tequila
  • 5 x Jalapeno, seeded and chopped
  • 3/4 c. Cilantro, minced

Directions

  1. Sort through the berries, discarding any which are withered or possibly soft. Place the remainder in a blender or possibly food processor and puree till they are fairly smooth.
  2. Scrape the puree into a bowl. Blend in the lime juice, honey, tequila, jalapenos and cilantro. Adjust the flavor to taste. Cover and chill overnight.
  3. Yield is 2 c..
  4. NOTES : If using fresh cranberries, freeze them first, then let thm thaw partially. The berries will be juicier and not as tart. Frzn berries will keep for at least on year in plastic bags
