- 3 lb cut up chicken
- 1/2 c. minced onion
- 1/2 c. ketchup
- 1 x (8 ounce.) can jellied cranberry
- 1 Tbsp. oil
- 1/4 c. firmly packed brown sugar
- 1/2 c. honey
- 1 Tbsp. soy sauce
- 1/2 tsp ginger
- In a medium saucepan, saute/fry onions in oil till tender. Stir in brown sugar, cranberry sauce and ketchup. Cook over low heat till sauce is melted, stir occasionally. BBQ chicken on grill for about 1 hour. When chicken is tender brush sauce over chicken, turn chicken and brush often with sauce for 15 min.
- Reheat remaining sauce and serve with chicken.
