Ingredients

  • 4 lb bone-in pork loin roast
  • 1 c. fresh or possibly frzn cranberries coarsely minced
  • 1/4 c. Atkins Sugar Free Pancake Syrup
  • 1 x canned chipotle en adobo minced
  • 2 tsp grated fresh ginger
  • 1/2 tsp salt
  • 1/4 tsp freshly-grnd black pepper

Directions

  1. In a small bowl mix cranberries, syrup, chipotle, ginger, salt and pepper. Place roast in slow cooker; rub with mix. Cover and cook on low 8 to 10 hrs.
  2. This recipe yields 6 servings.
